Vegan breakfast: Power for the day without animal products

Breakfast recipe: Tofu Scramble (vegan scrambled eggs)

Ingredients:

  • 200g tofu

  • 1 onion (optional)

  • 1 tbsp oil

  • ½ tsp turmeric

  • 2 tablespoons of water

  • 1 tbsp almond butter

  • Sea salt & pepper

  • Herbs (chives, parsley)

Preparation:

  1. Crumble the tofu, dice the onion.

  2. Fry in oil with turmeric for about 3 minutes.

  3. Mix water and almond butter, then add.

  4. Season with salt and pepper.

  5. Garnish with herbs and serve on wholemeal bread.

Variation: Add smoked tofu, bell peppers or zucchini – or for an oriental twist with mint & pomegranate syrup.
